Grape and Cream Cheese Pie

Ingredients:

For the pie crust:

  • 1 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • ½ tsp salt
  • ½ cup unsalted butter (cold and cut into small pieces)
  • 1 egg yolk
  • 1-2 tbsp ice water

For the filling:

  • 8 oz (225 g) cream cheese (softened)
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup heavy cream
  • 2 cups seedless grapes (red or green, sliced in half)

For topping (optional):

  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions:

  1. Prepare the Crust:

    • In a medium bowl, mix flour, sugar, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
    • Mix the egg yolk with 1 tablespoon of ice water, then gradually add to the dough until it just comes together. Add more water if necessary.
    • Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. Prepare the Filling:

    • Preheat the oven to 350°F (175°C).
    • In a mixing bowl, beat the softened cream cheese until smooth. Add the granulated sugar and vanilla extract, and beat until combined.
    • Add the egg and mix until smooth.
    • Gradually stir in the heavy cream until the mixture is well combined.
  3. Assemble the Pie:

    • Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer to the pie dish and trim any excess.
    • Pour the cream cheese mixture into the pie crust.
    • Gently fold the grape halves into the filling.
  4. Bake the Pie:

    • Bake for 45-50 minutes, or until the filling is set and the top is lightly golden.
    • If using the topping, mix the granulated sugar and cinnamon and sprinkle over the pie during the last 10 minutes of baking.
  5. Cool and Serve:

    • Allow the pie to cool completely before slicing. The filling will set further as it cools.

This pie is rich and creamy with a burst of freshness from the grapes. It’s perfect for a special occasion or as a unique dessert. Enjoy!
