A pie with grapes and cream cheese is a delightful twist on traditional fruit pies! The combination of sweet grapes and creamy cheese offers a unique flavor profile. Here’s a recipe to make a grape and cream cheese pie that’s both delicious and visually appealing.
Grape and Cream Cheese Pie
Ingredients:
For the pie crust:
- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- ½ tsp salt
- ½ cup unsalted butter (cold and cut into small pieces)
- 1 egg yolk
- 1-2 tbsp ice water
For the filling:
- 8 oz (225 g) cream cheese (softened)
- ¼ cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 cup heavy cream
- 2 cups seedless grapes (red or green, sliced in half)
For topping (optional):
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
Instructions:
-
Prepare the Crust:
- In a medium bowl, mix flour, sugar, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Mix the egg yolk with 1 tablespoon of ice water, then gradually add to the dough until it just comes together. Add more water if necessary.
- Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
-
Prepare the Filling:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, beat the softened cream cheese until smooth. Add the granulated sugar and vanilla extract, and beat until combined.
- Add the egg and mix until smooth.
- Gradually stir in the heavy cream until the mixture is well combined.
-
Assemble the Pie:
- Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer to the pie dish and trim any excess.
- Pour the cream cheese mixture into the pie crust.
- Gently fold the grape halves into the filling.
-
Bake the Pie:
- Bake for 45-50 minutes, or until the filling is set and the top is lightly golden.
- If using the topping, mix the granulated sugar and cinnamon and sprinkle over the pie during the last 10 minutes of baking.
-
Cool and Serve:
- Allow the pie to cool completely before slicing. The filling will set further as it cools.
This pie is rich and creamy with a burst of freshness from the grapes. It’s perfect for a special occasion or as a unique dessert. Enjoy!
